Grilled Delight: Campfire Quesadillas

Explore the fusion of gooey cheese, savoury fillings, and the satisfying crunch of a perfectly grilled tortilla under the stars. Elevate your campfire cuisine and treat your taste buds to a symphony of flavours with our Campfire Quesadilla extravaganza!

Ingredients:

  • Flour tortillas

  • Cooked chicken or beef strips

  • Sliced bell peppers and onions

  • Grated cheese (cheddar, Monterey Jack, or your favourite)

  • Salsa and sour cream for dipping


Instructions:

  • Place a tortilla on a flat surface.

  • Add a layer of cheese, followed by your choice of meat and vegetables.

  • Top with another tortilla and wrap the entire quesadilla in aluminum foil.

  • Place the foil-wrapped quesadilla on the campfire grate or a grill over the fire.

  • Cook until the tortilla is crispy, and the cheese is melted (usually around 5-7 minutes).

  • Unwrap, cut into wedges and serve with salsa and sour cream.

Julie arrived in Australia from New Zealand on a working holiday when she was just 20 years old. After 6 months in Australia, she met up with Ron for a bushwalking trip in the Blue Mts NSW. They discovered that they had a shared passion for walking, and really enjoyed each others company.
